Protein Pancakes
Protein pancakes are an easy way to elevate your breakfasts while still getting fueled for the day.
You’ll Need:
-1/2 cup oats
-1/2 cup Greek yogurt
-1 egg
-1/2 banana (optional for sweetness)
-1/2 teaspoon baking powder
-1/2 teaspoon of vanilla
-As much cinnamon as your heart desires
To Make:
Blend ingredients together until smooth. I like to use my kitchen aid mixer. For a thinner texture, you can add more yogurt or cut back on the oats slightly.
Heat your pan or skillet to prepare your oil. Butter, tallow, or lard works best.
Use an ice cream scooper or large spoon to drop the mixture into the pan, no need to flatten it out. Once it starts to bubble around the edges and turn burn, your pancakes are ready to flip.
This is the perfect time to add chocolate chips, berries, or other hidden treats to your pancakes. Adding them now instead of during the mixing process ensures that they don’t sink to the bottom and burn.
Once both sides of the pancakes are browned and cooked to your liking, remove, and top with your favorite maple syrup.
